Sisig

One thing I like about getting well after being so sick, is the part where I get to eat what I want in order to gain back my strength. A delicious excuse to start indulging again, hahaha...

Anyway, one of the first few dishes I made was sisig. It wasn't anything fancy nor tedious, thank god for the ready made pack of Monterey which you can get in any grocery store's frozen goods section.

A pack would probably be good for 2-3 people.... hungry people. And that night, Mon and I were the "three" hungry people unmindful of the calories and sterols sisig brings. All we wanted was the taste of real good food that we were deprived of for almost a week. (Yes, Mon was sick too.)

I simply poured the whole pack into a deep pot and worked up the heat. I prefer using a Dutch oven to avoid the splatter.

Halfway through, I added one chopped white onion and continued cooking until I reached my desired doneness.

I transfered everything over to my preheated sizzling plate and cracked an egg on top of the heap. We watched the whole plate sizzle as it cooked the egg. After evenly mixing the egg thru the dish, a dash of calamansi compeleted my homemade sisig.
