Field mushrooms

The lingering warmth in the ground and recent heavy mists and prolonged light rainfall, have combined to create perfect conditions for field mushrooms!  Lots of them, shining white orbs in the grass across the golf course and around the perimeter path.  I have resisted the temptation to pick from them the pathway - too many dogs pass that way - but on the golf course I am happy to gather as many as I can.  Their flavour is really good and as free local produce - what's not to love!

I've already made a mushroom tart with garlic, parsley and parmesan, which we enjoyed a couple of weeks ago.  Tonight I think we might have a leek and mushroom flan, and with the rest of my haul (because I can't resist picking them and collect far more than I need) I am going to make a duxelle to pack around a little bit of fillet of beef I have in the freezer, for a mini beef wellington for tomorrow.  With beans from the garden, that's two meals taken care of this week.  Hooray!

PS : I left my latest haul of mushrooms on the worktop for a few hours.  Here's what I found when I came to put them in the fridge!  The spores (I assume) had been busy, and having wiped the worktop down, there is an indelible pattern remaining.  I rather like it!
